The grapes grow under optimal conditions in the Marche region. Here, the vines dig their roots deep into sandy soils. The grapes for the Falerio dei Colli Ascolani are harvested exclusively by hand, without the aid of coarse and less selective machinery, at the time of optimum ripeness. After harvesting, the grapes are immediately taken to the winery. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures.
