On the nose, this Casebianche red wine reveals all kinds of raspberries. As if that weren’t already impressive, the maturation in large wooden casks also brings notes of blackcurrant. The Casebianche Dellemore Cilento presents itself to the wine enthusiast as wonderfully dry. This red wine never appears rough or austere, but rather round and smooth. On the palate, this well-balanced red wine is characterized by an incredibly meaty, velvety, and dense texture. The finish of this red wine from the Campania wine-growing region is delightfully long. Again, nuances of raspberry appear. On the aftertaste, mineral notes from the limestone- and clay-dominated soils join in. Vinification of Dellemore Cilento by Casebianche The balanced Dellemore Cilento from Italy is a cuvée, organically vinified from the grape varieties Aglianico, Barbera, and Piedirosso. The grapes grow under optimal conditions in Campania. Here, the vines drive their roots deep into clay and limestone soils. After the grape harvest, the grapes are quickly brought to the winery, where they are selected and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. Vinification is followed by 12 months of aging in oak barrels. Food recommendation for Dellemore Cilento by Casebianche This Italian red wine is best enjoyed at a tempered 15–18°C. It is perfect as an accompanying wine to duck breast with sugar snap peas, fried calf’s liver with apples, onions and balsamic sauce, or braised chicken in red wine.
