Vinification of the Shiraz d'Arenberg The Footbolt The Shiraz grapes are carefully harvested and immediately brought to the d'Arenberg winery. There, the grapes are gently crushed in small batches and then sent to open fermenters. Two-thirds of the way through fermentation, the grapes are crushed with feet. This red wine is then basket pressed and placed in new and used French oak barrels to complete fermentation. In the barrel, this wine continues to ferment on its lees.
