Vinification of the Valpolicella Ripasso Superiore from Monte Zovo The powerful Valpolicella Ripasso Superiore from Italy is a cuvée vinified from the grape varieties Corvina, Corvinone and Rondinella. Naturally, the Valpolicella Ripasso Superiore is also shaped by the climatic and stylistic factors of the Valpolicella Ripasso DOC. This Italian can in the best sense of the word be described as an Old World wine, which presents itself in an extraordinarily impressive way. After the grape harvest, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks and large wooden casks at controlled temperatures. After fermentation is complete, the Valpolicella Ripasso Superiore is matured for a further 18 months in oak barrels.
