The Albillo Real La Viña de Ayer is a white wine produced by SotoManrique in the Cebreros area, in the Sierra de Gredos. It comes from old Albillo Real bush vines, with an average age of about 60 years, cultivated dry between 700 and 800 meters of altitude on granite soils with the presence of schist, within a wine region of great tradition and authenticity.The grapes are hand-picked in boxes and subjected to cooling before processing. This is followed by a 36-hour maceration on the skins, spontaneous fermentation in concrete tanks, and subsequent aging in large oak barrels for about ten months, contributing to its development of complexity and structure.The wine has a bright yellow color and expresses intense aromas of white flowers and light-fleshed fruits on the nose. On the palate, it is flavorful, broad, with volume and persistence, characterized by natural elegance and strong personality.It is an ideal match with aged cheeses or legume-based dishes.
