Nestor is a Greco di Tufo from Tenuta Cavalier Pepe, made from Greco grapes grown on the hills of Santa Paolina and Montefusco, in the heart of the appellation, between 400 and 700 meters above sea level. The predominantly tuffaceous and clayey soils, with volcanic and calcareous components, help to express a wine with a strong mineral and territorial identity.The grapes are harvested by hand and selected in the winery, then gently pressed whole; the free-run must is cold clarified and fermentation occurs at a low temperature to preserve the varietal aromas, followed by aging on fine lees and further maturation in the bottle.It has a bright, intense yellow color with straw reflections; the nose reveals aromas of ripe fruit such as peach, pear, and apple, accompanied by citrus notes; on the palate, it is broad, fruity, and well-structured, with pleasant savoriness, balanced acidity, and long persistence.Perfectly pairs with fish dishes, vegetable soups, traditional first courses, and white meats.
