Production of Botánico Chardonnay by Zuccardi The grapes for Botánico Chardonnay come from selected parcels in Mendoza. The vineyards are located at higher altitudes at the foot of the Andes. During the day, the sun reaches the vines with clear intensity, while the nights cool down significantly. This change promotes aromatic grapes with robust structure and preserved freshness. The soils consist of gravel, sand, stones and calcareous layers. This combination ensures good drainage and lends the wines a precise, mineral line. Chardonnay shows a particularly exciting side in Mendoza. The grape brings richness, buttery aromas and a sense of melt. At the same time, in these sites it preserves a clear citrus freshness. This creates a powerful but never heavy white wine. For the Botánico, the Zuccardi team selects only pure-varietal Chardonnay grapes. Harvesting takes place at the ideal point of ripeness, when the grapes combine ripe aromas and stable acidity. The harvest is carried out carefully and selectively. Grapes with perfect ripeness quickly reach the winery. There they are gently pressed to obtain only the fine must. A short cold phase before fermentation intensifies the aromas and brings the fruit more clearly to the fore. Fermentation then begins under temperature control, partly in stainless steel tanks, partly in wooden barrels, depending on the desired structure and complexity. Maturation in wood plays an important role for this Chardonnay. The wine matures in barrels with light toasting. This creates the typical aromas of butter, vanilla, toast and nuts. At the same time, the influence of the wood remains elegant. Part of the wine remains on the fine lees. Through gentle stirring of the lees in the barrel, the creamy texture is created that makes the mouthfeel seem so buttery. This work in the cellar pursues a clear goal. The wine should express the terroir of Mendoza and at the same time show the full richness of Chardonnay. The fruit retains its clarity, the wood aromas are finely interwoven.
