Grown on Kimmeridgian clay-limestone soils, the vineyard is located in an extraordinary area where stones used for constructing historical monuments like the Pantheon in Paris were once quarried. The uniqueness of the terroir and the historic winemaking tradition of the village of Saint-Bris-Le-Vineux give this wine a distinctive character, straddling the styles of the Loire Valley and Burgundy.Vinification begins with the reception of the must and static clarification, followed by controlled fermentation in stainless steel tanks lasting 7-10 days at temperatures between 18 and 20°C. The wine then undergoes a complete malolactic fermentation and is aged on the lees for four months. This process enhances the varietal typicity of Sauvignon and enriches its complexity.The wine shows a golden color with white reflections. The nose is intense, with exotic notes of lychee, blackcurrant, and tropical fruits. The palate is tasty with pleasant acidity, with aromas of yellow-fleshed fruits like pineapple and a touch of characteristic and refreshing minerality that provides great balance and liveliness.It is ideal to serve as an aperitif or accompanying oysters, seafood, fish, white meats, and fresh cheeses.
