The Nebbiolo grapes are harvested selectively by hand, in small crates. Only ripe berries make it into the cellar. In this way, quality is ensured already in the vineyard. After harvest, the grapes undergo a careful selection. Damaged berries are consistently sorted out. The goal is clear, pure grape material that shows the character of Piedmont unadulterated. In the cellar, Barbaresco DOCG - Moccagatta is vinified in a traditional manner. First, the grapes are gently destemmed and lightly crushed. Fermentation takes place in temperature-controlled stainless steel or concrete tanks to preserve the fresh fruit and delicate floral aromas. During fermentation, the cap is regularly submerged. This gently extracts color, tannin, and aroma from the skins. The maceration period is deliberately extended to gain structure and depth.
