Vinification of the Steenberg Catharina The starting point for Steenberg's premium and wonderfully powerful Cuvée Catharina is Cabernet Sauvignon, Malbec and Merlot grapes. Catharina is an Old World wine in the best sense of the word, as this South African exudes an extraordinary European charm that clearly underscores the success of Old World wines. After the harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation at controlled temperatures.
