Vinification of the Two Oceans Moscato Sweet The elegant Moscato Sweet from South Africa is a single-varietal wine, vinified from the Moscatel grape variety. After the hand harvest, the grapes are immediately taken to the press house. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of the fermentation, the Moscato Sweet is allowed to further harmonize on the fine lees for a few months. Once the wine is finished, the Moscato Sweet is carefully harmonized.
