Vinification of the Brut Rosé from Francois Montand The basis for the elegant Brut Rosé from Jura are grapes from the grape variety Pinot Noir. When they are perfectly ripe, the grapes for the Brut Rosé are harvested particularly quickly and at the coolest possible time of day to preserve their aromas. Following the manual harvest, the grapes are quickly brought to the winery. Here they are selected and carefully crushed. The fermentation of the base wines follows. After the cuvée has been put together, further aging follows on the basis of the Méthode Traditionelle. Subsequently, the Francois Montand Brut Rosé matures for several months in the bottle and is finally disgorged. It is perfect as an accompanying wine to spaghetti with yogurt-mint pesto, fruity endive salad or vegetable salad with beetroot.
