The climate is continentally influenced, with hot, dry days and distinctly cooler nights. These temperature differences promote slow, even ripening and intensify the fruit aromas of the Malbec. The soils consist predominantly of calcareous and clayey structures with volcanic influences. This combination lends the wines finesse, structure and clearly defined aromatics. The vines root deeply and thus maintain a stable supply even during dry periods, which benefits the concentration of the grapes. The harvest is done by hand, grape by grape, directly in the vineyard. Only fully ripe, aromatically dense grapes go into small picking crates to ensure they arrive at the cellar intact. There, strict selection takes place at the sorting table before the berries are gently destemmed and prepared for fermentation. Fermentation takes place in temperature-controlled stainless steel tanks. In this way, the fresh, dark fruit remains clearly preserved while the typical Malbec depth of color and structure develops. Through gentle punching down of the cap, only the best components from the berry skins pass into the must. The tannins thus gain finesse without losing their inner strength. After fermentation, the wine continues to rest in stainless steel tanks on the fine lees. This maturation adds extra creaminess and allows the tannins to gently coat the palate without overshadowing the freshness and precision of the fruit. The winemaker’s style shows a clear signature: maximum expressiveness of the grape, pure fruit, a clear, modern line and a distinct yet elegant structure.
