Maceration with the skins lasts for twelve days and is accompanied by daily remontage to optimize color and tannin extraction. Malolactic fermentation is completed in full to ensure greater stability. This is followed by total aging of at least twenty-six months, including nine months in wooden barrels, to perfectly integrate the tannic component.Tasting notesIn the glass, it shows a solid and clean appearance, consistent with its long aging period.
