Umami Gin is produced by Audemus Spirits, a distillery based in Cognac, France. The taste is inspired by the fifth element of taste, defined by this term of Japanese origin which refers to the taste of monosodium glutamate. In umami, flavor stands out, which combines with the other 4 sensations: sweetness, acidity, bitterness and sourness. Among the botanicals used in this gin are capers, parmesan, juniper, bergamot. The gin ages in ex cognac barrels for a few months. It is a gin with a unique, slightly salty flavour, which can be enjoyed both on its own and, with the right tonic, also in a fantastic cocktail.
