Vinification of the Chianti Classico from Gabbiano The grapes for this Italian wine come from 15-year-old vines. After the grapes arrive at the winery, they are pressed and the resulting mash is fermented in stainless steel tanks. After the fermentation process, 60% of this wine is aged for 8 months in large wooden barrels, 20% for 6 months in barriques and 20% for 8 months in cement tanks.
