Vinification of the Stefano Accordini Valpolicella Classico This elegant red wine from Italy is made from the Corvina, Molinara and Rondinella grape varieties. When they are perfectly ripe, the grapes for the Valpolicella Classico are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After manual harvesting, the grapes are quickly taken to the press house. Here they are selected and carefully crushed. Fermentation then takes place in large oak barrels at controlled temperatures. Once fermentation is complete, the Valpolicella Classico is matured for a few months in large oak barrels.
