Vinification of Korsič Malvasia Collio The basis for the balanced Malvasia Collio from Italy is grapes of the Malvasia Bianca variety. The grapes grow under optimal conditions in Friuli Venezia Giulia. Here, the vines sink their roots deep into sandstone soils. After being harvested by hand, the grapes are immediately brought to the winery. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation is complete, the Malvasia Collio can continue to harmonize on the fine lees for several months.
