Vinification of the Pomino Pinot Nero by Castello Pomino This elegant red wine from Italy is made from the Pinot Noir grape variety. The grapes grow under optimal conditions in Tuscany. Here, the vines sink their roots deep into soils of limestone and marl. Without question, the Pomino Pinot Nero is defined by more than just the terroir of Pomino DOC. This Italian can truly be described as a wine of the Old World, presenting itself in an extraordinarily impressive way. When perfectly ripe, the grapes for the Pomino Pinot Nero are harvested exclusively by hand, without the use of coarse and less selective mechanical harvesters. After harvesting, the grapes are promptly taken to the press house, where they are sorted and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. After fermentation is complete, the Pomino Pinot Nero is matured for another 16 months in French oak barriques. The maturation in barrels is followed by a long bottle aging, which makes this red wine even more complex.
