Vinification of the Castel Firmian Pinot Grigio Castel Firmian Pinot Grigio is vinified using the traditional method with brief contact of the grape skins at a cold temperature. This process serves to improve the structure and richness of the wine. Fermentation then takes place at a controlled temperature of 18-20 °C.
