Vinification of Fantini Pecorino by Farnese This Italian can quite literally be described as an Old World wine that presents itself as exceptionally youthful. A special feature of the Calalenta is already evident in the name, as Calalenta means night harvest. After the nighttime harvest, the grapes are quickly brought to the press house. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures of 10–12°C. Vinification is followed by maturation on the fine lees for 30–35 days before the wine is finally bottled.
