Vinification of the Danie de Wet Good Hope Sauvignon Blanc This white wine clearly focuses on one grape variety, Sauvignon Blanc. For this exceptionally elegant single-varietal wine from Danie de Wet, only first-class grape material was brought in. The grapes grow under optimal conditions in the Breede River Valley. The vines here dig their roots deep into soils of clay and limestone. After the grape harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of fermentation, the Good Hope Sauvignon Blanc is allowed to further harmonize on the fine lees for a few months.
