Vinification of Torrevento Ghenos The grapes for this single-varietal Primitivo grow in Apulia - the DOC Primitivo di Manduria wine region. The vines grow on clayey soils. The grapes are harvested in mid-September and immediately taken to the Torrevento wine cellar. There, the grapes are first fermented in stainless steel tanks. This is followed by a maceration period. Once the fermentation process is complete, this red wine is matured for 10 months in stainless steel tanks - followed by 6 months in barrique barrels. Finally, this wine rounds off harmoniously in the bottle before leaving the winery.
