The fruity hints of the bouquet are joined by notes of barrel aging such as juniper, oriental spices and cocoa bean. This wine delights with its elegantly dry flavor. It was bottled with exceptionally low residual sugar. Here it is a real quality wine, which clearly stands out from simpler qualities and so this German wine enchants naturally with all dryness with the finest balance. Aroma does not necessarily need a lot of sugar. On the tongue, this powerful red wine is characterized by an incredibly dense texture. In the finish, this red from the wine-growing region of Palatinate finally inspires with considerable length. Once again, hints of black currant and blueberry appear. In the aftertaste, mineral notes of the soils dominated by loess and loam are added. Vinification of the Emil Bauer Servator Cuveé The basis for Emil Bauer's first-class and wonderfully powerful Servator Cuveé is Barbera and Nebbiolo grapes. The grapes grow under optimal conditions in the Palatinate region. The vines here dig their roots deep into soils of clay, limestone and loess. The fact that the Barbera and Nebbiolo grapes thrive under the influence of a rather cool climate also has a very high influence on the development of the grapes. This manifests itself, among other things, in particularly long and evenly ripened grapes and rather moderate alcohol content in the wine. At the time of optimal ripeness, the grapes for the Servator Cuveé are harvested exclusively by hand, without the help of coarse and less selective machines. After the harvest, the grapes are taken to the press house by the fastest route. Here they are selected and carefully crushed. Fermentation follows in large wood at controlled temperatures. Vinification is followed by aging for several months in French oak barrels. Food recommendation for Emil Bauer Servator Cuveé This red wine from Germany is best enjoyed tempered at 15 - 18°C. It is perfect as an accompanying wine to Thai cucumber salad, spicy curry with lamb or red onion stuffed with couscous and apricots.
