Vinification of the Grillo Feudo Arancio The Grillo is also known as Riddu in Sicily and is the most widely recognized white wine grape on the island. After harvesting, the grapes are destemmed and pressed to protect them from the air. This prevents the must from oxidizing. This wine then ferments at a controlled temperature of 18° for around 10 days. This white wine matures for a further 5 months in steel tanks on the fine lees until it is bottled.
