Vinification of Sassotondo Ciliegiolo Maremma Monte Calvo This red wine clearly focuses on one grape variety, namely Ciliegiolo. For this wonderfully powerful varietal wine from Sassotondo, only immaculate grapes were used. In Tuscany, the vines that produce the grapes for this wine grow on soils of volcanic rock. After the grape harvest, the grapes are quickly taken to the winery. Here they are selected and carefully crushed. Then fermentation takes place in stainless steel tanks and large wood at controlled temperatures. Fermentation is followed by aging for 12 months in oak barrels.
