Vinification of Dellemore Cilento by Casebianche The balanced Dellemore Cilento from Italy is a cuvée, organically vinified from the grape varieties Aglianico, Barbera and Piedirosso. The grapes grow in optimal conditions in Campania. Here, the vines dig their roots deep into soils of clay and limestone. After the grapes are harvested, they are quickly taken to the winery. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks and large wood at controlled temperatures. Vinification is followed by aging for 12 months in oak barrels. Serving Suggestions for Casebianche's Dellemore Cilento This Italian red wine is best enjoyed at a temperate 15 - 18°C. It is perfect as an accompanying wine to duck breast with snow peas, roasted calf's liver with apples, onions and balsamic vinegar sauce or braised chicken in red wine.
