Vinification of the Zenato Amarone della Valpolicella The Amarone is considered the top wine in the Veneto region. Its incredible variety of aromas comes from the strict selection of grapes from the Corvino, Rondinella and Sangiovese grape varieties. After 4 months of drying on straw mats and fermentation of these particularly concentrated grapes, the wine is aged for 30 months in French and Slavonian oak. The Amarone only leaves the Zenato family winery on Lake Garda after a further year in the bottle.
