The soils are calcareous, partly interspersed with clay marl, moderately heavy and loose and mixed with small and medium-sized gravel. A Mediterranean climate with mild winters, limited rainfall and very warm and windy summers promote the growth of this ancient grape variety. After harvesting, the grapes are macerated at a controlled temperature, followed by malolactic fermentation in tanks and ageing in small wooden barrels for a period of 8 to 10 months.
