Vinification for the Valpolicella DOC from Latium Morini This cuvée is made from the Corvina, Rondinella and Croatina grape varieties. The vines are rooted in limestone-clay soils in the Mezzane di Sotto region. After harvesting, the grapes are destemmed and pressed, followed by cold maceration for 12-18 hours at 7-8°Celsius. Fermentation takes place at a controlled temperature and this wine is matured in stainless steel tanks.
