Chardonnay Unwooded is produced by the Diemersdal winery, a historic South African wine company that has thrived in the Durbanville Valley since 1698. Here, a short distance from the Atlantic Ocean, the 340 hectares of property enjoy a fresh breeze and a climate conducive to the cultivation of the lives. From 180 hectares of vineyards, defined by a predominantly clayey soil, grapes grow that know how to reach an optimal degree of ripeness. They are harvested at night, then transported to the cellar and sent for a maceration of one or two days. Then follows the pressing and alcoholic fermentation in steel containers. A 4-month maturation in the same, in contact with its fine lees, makes the wine ready to be bottled. Straw yellow in the eye. Its aroma is typically fruity: reminiscent of apple, peach, melon and vanilla. In the mouth it reveals an excellent structure and a consistent body, in a precise and persistent aroma.
