Friulano Collio DOC - LivonThe Friulano Collio DOC from Aziende Agricole Livon is a classic from Friuli, which comes into the glass with a straw-yellow color and greenish reflections typical of the variety. The characteristic bouquet is very fine and pleasing with its delicate aromas and hints of almonds. The Friulano is dry, harmonious and full-bodied on the palate, with a delicate freshness and a soft, pleasantly long finish. Vinification of the Friulano Collio DOC from Livon The grapes for this typical Friulian white wine made from 100% Friulano grow on marly-loamy soil in the vineyards of the Livon winery in the municipality of Dolegna del Collio. Harvested by hand, the grapes are crushed for eight hours at a cold temperature in the horizontal press, after which the must is clarified by natural decantation. Fermentation takes place in steel tanks at a controlled temperature of 18° C. After fermentation, the resulting wine remains in the same tanks at a constant temperature for around 5 months. Finally, the wine is bottled, where it matures for a certain amount of time before being sold. Livon's Friulano Collio can be stored for 4 to 5 years. Recommendation for the Friulano Collio DOC from Livon Friulano is an excellent wine that can be enjoyed outside of meals, making it the classic aperitif wine. At mealtimes, this white wine from Friuli goes perfectly with fish dishes, grilled poultry and rabbit meat. It is particularly delicious as an accompaniment to tender raw ham from San Daniele del Friuli, even when lightly smoked.
