Vinification of Zenato's Bardolino The grapes for this cuvée are made from Corvina, Rondinella and Morellino. The vines grow on loamy and calcareous soils. The Mediterranean climate is characterized by dry summers and mild, humid winters. The grapes are harvested by hand and selected in the vineyard. Once the grapes arrive in the Zenato wine cellar, they are destemmed, macerated at a controlled temperature and fermented in stainless steel tanks. Once the fermentation process is complete, the wine remains on the skins for another 4 weeks.
