In Castile - Leon, the vines that produce the grapes for this wine grow on soils of gravel. After the grape harvest, the grapes reach the winery in the fastest way. Here they are selected and carefully broken up. Fermentation then takes place in stainless steel tanks at controlled temperatures. Fermentation is followed by aging for several months on the fine lees before the wine is finally bottled. Once the wine is finished, the Varietal Verdejo is carefully dealcoholized.
