Monferrato Rosso Ciuchino is a red wine produced by Cascina Valle Asinari in the San Marzano Oliveto area of Piedmont. This wine is a blend of Barbera, Cabernet and Merlot grapes, grown on sandy and loamy soils at an altitude of 300 meters above sea level, with southern exposure. The vinification takes place separately for each grape variety in cement vats, with spontaneous fermentation. After fermentation, the wine is aged for a year in cement, to preserve the freshness and varietal characteristics of the grapes. After the ageing, the wines are assembled and then bottled, thus maintaining the integrity and typicality of the terroir of origin. It presents a complex and enveloping aromatic profile, where fruity notes of berries and cherry stand out, accompanied by delicate spicy nuances. On the palate it is well structured, with good acidity and soft tannins that give a long and pleasant finish. This red wine from Monferrato is ideal to pair with grilled red meats, game and mature cheeses.
