Vinification of the Vin Santo from Castello Pomino This powerful Vin Santo from Italy is made from the Malvasia Bianca, San Colombano and Trebbiano grape varieties. The grapes grow under optimal conditions in Tuscany. Here, the vines dig their roots deep into limestone and marl soils. Once fermentation is complete, the Vin Santo is aged for 48 months in oak barrels.
