Vinification of the Criseo Bolgheri Bianco from Podere Guado al Melo The golden yellow Criseo - the name means made of gold - is something completely new for Bolgheri and the region. It is the result of the winemaker's passion for great, mature, expressive white wines. All the grape varieties for this wine grow in a single, specially planted vineyard, Campo Bianco, reviving an ancient custom: Vermentino, for the most part, Fiano, Verdicchio, Incrocio Manzoni and Petit Manseng. The vineyards stand on loose, deep and structurally rich alluvial soils. The Mediterranean climate is influenced by the thermal winds from the nearby Thyrrenian coast, with considerable temperature differences between day and night in summer. Cultivation and wine production are sustainable and use integrated organic farming methods. The grapes are harvested together by hand, at a carefully selected time, and fermented together. After gentle pressing, the must is clarified by natural sedimentation using cooling. Vinification in stainless steel tanks takes place without any additives or corrections that could alter the original character of the grapes in any way. It is then aged for 1 year in stainless steel tanks on the fine lees, which gives the wine longevity and complexity, followed by 1 year of bottle ageing. The label depicts three dancing satyrs holding a chalice and musical instruments, three gifts that, according to legend, Bacchus gave to mankind to forget the worries of everyday life: Wine, dance and music.
