Fermentation takes place in truncated cone-shaped steel vats at around 23 °C, with maceration on the skins for 10-12 days and daily pump-overs to extract color and tannins. The wine matures for 12 months in a blend of tonneaux and steel, then spends a further six months in the bottle, offering evolution and stability before release.Tasting notesIt appears a brilliant ruby red with garnet reflections. On the nose, red and black fruits such as currant and wild strawberry emerge, alongside hints of black pepper and tobacco.
