The Alta Langa DOCG Riserva Coppo by Luigi Coppo is a blend of Pinot Noir and Chardonnay vines grown in territories characterized by a south-west exposure and clay-limestone marl soils with a prevalence of silt, which offer ideal conditions for the maturation of grapes intended for the production of refined and complex sparkling wines. The harvest, which takes place in August, involves a selection of the healthiest and ripest grapes, harvested manually, and soft pressing. Fermentation takes place in barriques. These processes that contribute to the aromatic profile of the sparkling wine. It presents a bright straw yellow, embellished with brilliant reflections and a fine perlage. On the nose it is fragrant and complex, with sweet and fruity tones that invite tasting. In the mouth, the experience is fresh, vertical and complex, characterized by a long persistence. This sparkling wine pairs perfectly with rich, structured dishes such as grilled meats, oysters and pigeon casserole, demonstrating gastronomic versatility.
