The Chablis Premier Cru Mont de Milieu from Maison Ropiteau Frères comes from vineyards located on the right bank of the Serein River, in the communes of Fleys and Fyé. The name refers to the old border between Burgundy and Champagne, still symbolized today by a stone placed on top of the hill. The soils date back to the Jurassic period, specifically the Kimmeridgian stage, and the south/southeast exposure ensures excellent sunlight that favors optimal ripening.The winemaking process begins with a long and delicate pneumatic pressing, followed by natural static clarification. The must then ferments in stainless steel tanks at a controlled temperature (18-20°C) to preserve freshness and finesse. After malolactic fermentation, the wine ages for 12 months in barrels in contact with fine lees, with gentle bâtonnage to enhance its complexity and roundness.In the glass, it presents a pale gold color with greenish reflections. On the nose, it is initially closed but opens after a few years with floral or mineral scents depending on the vintage. On the palate, it is deep and structured, with intense and persistent aromas that leave an elegant and refined impression.It is ideal paired with grilled fish, shellfish, poultry in sauce, or fresh cheeses.
