A cool, slightly mineral nose of physalis, rhubarb, quince, yellow stone fruit, a salty breeze, and a hint of clover. Clear and delicately juicy, a firm body with a fine, subtle structure, invigorating freshness, plenty of quince on the palate, tart herbal notes (sage) and a persistent, slightly soapy minerality, a subtle underlying yet consistent extract sweetness, straightforward with charm and elegance, slightly astringent, a long finish with a dialogue between this minerality and the fine extract sweetness, with continued notes of yellow stone fruit, very harmonious, stimulating, and drinkable.
