Vinification of Castelfeder Pinot Grigio 15 This Pinot Grigio 15 comes from the Unterlander vineyards in South Tyrol, where the Castelfeder grapes grow on sandy limestone gravel soils. After being harvested by hand, the grapes are gently pressed and the must fermented in stainless steel tanks. After fermentation, the Pinot Grigio 15 matures on the fine lees for a further 6 months before it is finally bottled.
