Vinification of the 3 Finques Empordà by Castillo Perelada The basis for the powerful 3 Finques Empordà from Catalonia are grapes from the grape varieties Cabernet Franc, Cabernet Sauvignon, Cariñena, Garnacha, Merlot and Tempranillo. In Catalonia, the vines that produce the grapes for this wine grow on soils of slate. After the harvest, the grapes reach the press house by the fastest route. Here they are sorted and carefully crushed. Fermentation follows in small wood at controlled temperatures. Fermentation is followed by 12 months of aging in 1000 liter oak barrels.
