Vinification of the Merlot from Sierra Noble The foundation for the balanced Merlot from Chile is grapes of the Merlot variety. After harvesting, the grapes are immediately brought to the pressing house. Here, they are sorted and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, a maturation period of several months on the fine lees occurs, before the wine is finally bottled. Food recommendation for Sierra Noble Merlot This Chilean red wine should best be enjoyed at a temperature of 15 - 18°C. It pairs perfectly as a companion wine to duck breast with sugar snap peas, vegetable couscous with beef meatballs, or ossobuco.
