Barolo Paesi Tuoi by Vite Colte originates from the renowned area of the Langhe, in Piedmont. It is produced from pure Nebbiolo grapes, harvested and selected entirely by hand. Fermentation takes place at a controlled temperature of 30 °C for about 15–20 days. This operation allows the wine to enrich itself with the tannin necessary for long ageing. Ageing takes place in large oak barrels for at least 24 months and then in the bottle for another 12 months. In this way, the wine reaches its final balance.Paesi Tuoi Barolo is characterized by an intense and velvety garnet red colour, with reflections tending to orange with ageing. The nose opens with a large and complex spicy bouquet, enriched by hints of licorice and dried violet. On the palate it is pleasantly dry and savoury, with harmonic tannins that enhance its elegant character. Perfect to combine with aged cheeses and mushrooms, it is ideal to accompany baked chicken and savoury stewed meat recipes with polenta side dish.
