Terra del Varo is a red wine from Tenuta Cavalier Pepe made from a blend of Aglianico grapes and a small percentage of Merlot, cultivated in hillside vineyards located in the municipalities of Luogosano, Sant’Angelo all’Esca, and Taurasi, at around 350 meters above sea level. The clay-limestone soils with volcanic elements help define a rich and distinctive profile.The grapes are harvested by hand and selected before vinification, then destemmed and subjected to alcoholic fermentation at a controlled temperature with skin maceration; the wine is subsequently aged in cement tanks for an extended period and completes its maturation with further aging in bottle.It displays an intense ruby red color; on the nose, it reveals aromas of red fruits such as blackberry and black cherry, accompanied by notes of black pepper, cocoa, and light spicy nuances; on the palate, it is smooth and balanced, with elegant tannins and a lingering finish that echoes fruity and spicy sensations.It pairs perfectly with cold cuts, cheeses, pasta dishes with rich sauces, roasted meats, and flavorful preparations.
