Vinification of ULISSE Trebbiano d'Abruzzo DOC The ULISSE line consists of single-varietal wines that impressively demonstrate what fantastic aromas and flavors can be created when indigenous grape varieties grow on the soils that are ideal for them. The Trebbiano grape variety is one of the most widely cultivated white wine grapes in the world and has a long history. It is believed that this grape originates from the eastern Mediterranean region and was already known to the Romans. Selective hand-picking is carried out in 10-kilogram containers, and cooled with dry ice so that the grapes reach the winery undamaged. There they are sorted again to ensure absolutely delicious harvested fruit. The grapes are cooled down to -5°C within 3 minutes using nitrogen. This breaks down the cell structure and promotes extraction, which explains the intense, fascinating, fresh-fruity aromatics of this wine. Fermentation takes place in temperature-controlled stainless steel tanks, followed by maturation in the same tanks for a period of 3 months.
