This grappa, aged for 5 years in medium-toasted French oak barrels, offers a rich and complex aromatic profile. The distillation is done with a discontinuous method, using steam boilers and a low-degree column, with a careful manual selection of the heads and tails for each batch. This meticulous process preserves the fruity notes and enriches them with hints derived from the long rest in wood. The grappa is distilled within 48 hours of racking to ensure maximum freshness of the raw material. The intense golden color with amber reflections is the first sign of its long maturation. On the nose this grappa reveals an elegant and refined bouquet, with ethereal notes of black cherry in alcohol, candied citron, oak and vanilla. On the palate it is warm, balanced, with a notable persistence that lets hints of tobacco, licorice, cinnamon and honey emerge in the aftertaste.
