Vinification of Lefkos by Cenatiempo This well-balanced white wine from Italy is vinified from the Forastera and Biancolella grape varieties. After being harvested by hand, the grapes are quickly brought to the winery. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by maturation for several months on the fine lees before the wine is finally bottled.
