The word Pergamino derives from the German term Pergament, and is meant to draw attention to the paper that wraps the bottle. Vinifcation of the Monte Ducay Reserva Seleccionada Pergamino Tinto The grapes harvested by hand at Bodegas San Valero are first destemmed, crushed and the resulting must is fermented in stainless steel tanks under temperature control. After fermentation is complete, the wine is first aged for 12 months in American oak barrels before finally rounding out in bottle for another 24 months.
